History:
The Himalayan Restaurant in Niles opened its door in December 2003. With 6 years of experience under their belts the team decided to open a second location in Bloomingdale, IL in 2008.
Management:
Mr. Sudhir KC - Sudhir has been working in the Indian Restaurant industry since he came to the United States over 10
years ago. From restaurants downtown to devon, he has made his commitment to making the customer service in the
Indian restaurant in par with those of the fancy and high end restaurants in the country.
Being a perfectionist, Sudhir realizes that providing quality food only is not enough to bring repeat business from patrons,
it has to be complimented with an equally satisfying level of service.
At Himalayan Restaurant, Sudhir is not only a hand on manager with eye for details, he is also continuously training
other staffs and members in customer service and to have attention to details.
Chef Information:
Chef Harun Miyah (Dada) - With over 27 years of cooking experience under his belt, Chef Harun Miyah aka Dada has
worked at restaurants from Germany to New York and a number of restaurants in Chicago. "The secret to great food
is not to throw the spices in the pan, mix it up and serve it. You have to add the right spices at the right time and cook
the food thoroughly, so the taste and aroma of the spices can be savored with every bite". With this philosophy, Chef
Dada, doesnot cut corners and doesnot allow an impatience customer force him to serve a dish that he is not satisfied
with. "I will only serve a customer what I would serve myself", he says.
Chef Dada has been with the Himalayan Restaurant, since their doors opened in Niles 7 years ago. He has also
been a great teacher in training his style of cooking to a number of trainees at the restaurant.
Chef Bishnu Subedi - After a few years of training in Nepali and Indian culinary in Kathmandu, Chef Bishnu has
worked in Schamburg, Devon and Evanston as a server and chef before partnering to open the Himalayan Restaurant.
With over 12 years of experience, chef Bishnu’s passion for cooking can be experienced in every dish he
makes. He says, "I don’t own this restaurant, our customer does. We are only here to serve them. If I cannot make
them happy, I am not doing my job and I cannot introduce myself as a chef. If you are not satisfied with what I serve
you, tell me what you were expecting and how you want it and I will make it your way. When you leave my restaurant,
you have to be satisfied. Anything less is not acceptable here."
Nepali & Indian Historical Context:
Indian Cooking has evolved immensely over the ages. The cuisine of this culture is believed to be as old as time
itself. The different styles and flavors can be attributed to the many different influences brought into the country by
the various rulers and travelers. What is so incredibly genuine, though, is the fact that the cultural cuisine has not lost
its original identity, instead it has become richer with the assimilation of the vastly different influences. This is very
apparent in some of the unique regional cuisines. Many believe that the Ayurvedic tradition of cooking is where the
current cuisine can be traced back to. This style showcases a holistic approach to cooking and it lays the foundation
of the concept that everything we eat affects both our body and mind. Due to that food should be pure, from nature,
and balanced. This is achieved by balancing the six tastes – Sweet. Sour, Salty, Pungent, Bitter, and Astringent.
These tastes relate to the attributes of Essence and Effect.
The Nepali influence at the Himalayan reflects the Asian/Indian fusion style of food the restaurant offers. It offers an
incredibly vast menu to customers that is easy to decipher and helpful in terms of what the food is made of. The team
does an incredible job of labeling the “hot factor” of the meal. What truly gives the Himalayan Restaurant an advantage
is their offering of highly delectable vegetarian meals. They incorporate veggies, rice, breads and spices for an
incredible vegetarian experience!
